Boxed Meat

Meat boxes are Aberdeen Angus or Lincoln Red Beef depending upon availability.  Box prices are between £95 to £125, this is due to the size of the sides of beef.  All meat is vac-packed & labelled.
Contents of boxes:

  1. Mince – burgers, casseroles, chilli, lasagne.
  2. Stewing beef, casseroles, curry, stew.
  3. Brisket Pot roast – for best results cook very slowly.
  4. Roasting Joint – cook to taste, rare, medium, well done
  5. Rump Steak – grill, or fried
  6. Sirloin Steak or joints – grill, fry or roast
  7. Ribeye Steak – grill or fry
  8. Fillet Steak – grill or fry

RECIPE – to try

Beef & Beer Casserole

(serves four to six)

  1. 2-3lbs Lincoln Red brisket or stewing beef
  2. 1 pint Lincoln Red beer
  3. 2 medium onions
  4. 8oz good streaky bacon – smoked or unsmoked
  5. 2 tablespoons chopped capers
  6. Sprig of fresh thyme
  7. 2/3 bay leaves
  8. Mushrooms (optional)
  9. 2 tablespoons plain flour
  10. salt & pepper to taste

Marinate the beef in the beer, thyme & bay leaves for five to six hours or overnight in the fridge. (Chop the beef or leave whole if a joint before marinating).
Brown the chopped onions & bacon in olive oil.
Take the beef out of the marinade , dust with flour & brown/seal in the frying pan with the onions . Add chopped mushrooms, if using, & brown them
Add marinade & capers, bring to the boil & season to taste. Add more liquid to cover & thicken if required.
Put in casserole dish, cover & cook in oven at 350F/180C /Gas mark 4 for two hours, or until tender.
